Food & Beverage Manager

RightMove Recruitment are now hiring a Food & Beverage Manager for our client based in Sandymount, Co. Dublin.

The Food & Beverage Manager is a key member of the Food and Beverage team, working closely with the Head Chef, Operations Manager and Conference & Events Exec.

The main purpose:

  • To lead, develop and support the team.
  • Ensure the effective, customer-focused and efficient service of breakfast, lunch and dinner.
  • Lead the team by directing their work and ensuring a high standard of customer service and team performance.
  • Ensure the team is well-trained, well-presented, and knowledgeable about the beverage and food services.
  • Carry out all administration and finance for the department including rosters, training schedules, orders, stock and budget.

Key Accountabilities

Restaurant and Bar Management

  • Writes, revises and communicates hotel Standard Operating Procedures clearly and regularly
  • Maintains and improves restaurant and bar standards to ensure continuous improvement
  • Checks functions sheets daily to be aware of booked functions and events for the restaurant and bar
  • Strictly follows and observe all hygiene regulations, health and safety and employees safe working practices
  • Ensures a high standard of hygiene and cleanliness of restaurant and bar
  • Communicate and maintain the standard of uniform and personal hygiene
  • Promotes in house sales and maximises F&B revenue
  • Proactively contributes ideas and innovations within the department
  • Ensures all waste is appropriately disposed of and recycled where possible
  • To work a DM shift as required

Guest and Customer Care

  • Ensures a welcoming and friendly service is provided
  • Ensure guests are checked frequently and are happy with food, drinks and service
  • Makes conscious efforts to ensure that the restaurant is always ready to serve incoming guests and that no guests are left unattended
  • Ensures the phone is answered promptly and politely
  • Resolves customer complaints promptly and effectively
  • Ensures all guests are billed correctly
  • Ensures the restaurant is fully prepared and staffed for events so that the team are prepared and know what to expect
  • Regularly reviews Trip Advisor, Revinate and comment cards from guests in relation to the restaurant
  • Ensures responsibility for F&B reviews and resolutions

Training, Development and Team Management

  • Provides leadership and direction to the team
  • Develops own skills and knowledge
  • Ensures team report for their shift on time with correct uniform and grooming
  • Conducts skills training to ensure consistent level of performance – instruct and show team members how things are done if there is a problem
  • Arrange cover for any absences (calling in sick, illness whilst on shift) and send employees home if no longer required
  • Ensures all team receive manual handling, customer service, cash handling, responsible service of alcohol, H&S and food safety training
  • Take reasonable care for your own health and safety and for the health and safety of everyone else who may be affected by your conduct
  • Organise and attends job specific training as required
  • Sets weekly team rosters
  • Supervises team and allocates duties
  • Conducts probation reviews and deal with performance issues

Administration and Finance

  • Attends and contributes to regular meetings – 11am and 3.30pm (F&B, HOD and Operations meetings)
  • Ensures cash handling procedures are thorough and secure
  • Ensures accuracy of floats – checks regularly and reports any inconsistencies
  • Maximises sales in restaurant/bar
  • Manages and controls all stock levels, ordering and deliveries
  • Liaises with Duty Manager, Ops Manager, Head Chef and Conference and Events Manager to implement special events in the restaurant and bar, communicating effectively
  • Understands and is aware of F&B budget and look for opportunities to grow and develop the business are maximised
  • Manages weekly stocktake, ensuring deliveries are checked and stock is secure
  • Works with Accounts and Ops to set and strive to achieve targets and budgets
